Cole's Baked 8-Layer Taco Dip

Ingredients

  • 32 oz refried beans (2 cans)

  • 1 can (15 oz) black beans, drained & rinsed

  • 1 lb ground beef

  • 2 oz taco seasoning (about 5 Tbsp), divided

  • 8 oz cream cheese, softened

  • 1 lb sour cream

  • 2 cups pico de gallo or salsa

  • 1–2 cups shredded mild cheddar cheese

  • 12–16 oz guacamole (added after baking)

Instructions

  1. Cook the beef in a skillet over medium heat. Drain grease. Add ½ the taco seasoning and a splash of water. Simmer 2–3 minutes. Set aside.

  2. Season the refried beans with ¼ of the taco seasoning until smooth.

  3. Make the creamy layer in a bowl, mix cream cheese, sour cream, and remaining taco seasoning until smooth.

  4. Preheat oven to 375°F (190°C). In a deep 9×13 dish, layer in this order:

    • Refried beans

    • Black beans

    • Seasoned ground beef

    • Cream cheese & sour cream mixture

    • Pico de gallo or salsa

    • Shredded cheddar cheese

  5. Bake uncovered for 15–20 minutes, until hot and lightly browned on top.

  6. Remove from oven and let cool 5 minutes.Spread guacamole evenly over the top, then garnish with lettuce, green onions, and/or cilantro.


Tips

  • Let the beef cool slightly before layering to prevent excess grease.

  • If your salsa is watery, drain it first to avoid a soggy dip.

  • Serve warm with tortilla chips.
